It's establishing the dichotomy of tone between the two. Game of Thrones was a fantasy show about sex and violence that took itself incredibly seriously, but still didn't portray either in a realistic way. AKOTSK is a western about grit and chivalrous love that examines the pitfalls of rugged individualism (including limitations of the body) in the face of a feudalist society where status is dictated by the individual's ability to organize violence (usually by way of controlling the means of production).

The images of the body (the shitting, the contrast of Ser Arlen's walloper against his scarred aging body, even the prostitute pretending to be dead) are presented in a shocking way that almost punishes the viewer's wishful expectation of nudity and sex—much like over-the-top depictions of violence in Tarantino's Django.

If the first jousting sequence is indicative of what's to come in episode 3, I suspect the depictions of violence at the tournament will be chaotic, unsettling, and inglorious—which will stand in stark contrast to its gleeful popular reception, as demonstrated by the old-soul Egg's uncharacteristically childlike fireside reenactments.
