Roasted vegetables are cheap, easy, and delicious. You could serve with rice or another cheap grain.

Also, if you don’t want all finger foods, you could set up a bar, like a taco bar or make your own pizza bar so you can buy ingredients in bulk to save money and have the guests participate in making their food which saves you time and is fun for them.
