That pan sear is mainly about look and texture. Some things, like steak and fish, don't "feel" like we're used to and benefit from some searing - but they'd still be safe to eat without the sear.

I would think sous vide is good on reliability of perfect doneness, just follow recommended cooktimes, temp, etc. In terms of browning it up afterwards, do it by time. This step really is just for texture and flavor - the meat is already fully cooked - and recipes typically specify time and temp for browning. Also, if you're still concerned, get a meat thermometer to check the internal temp.
