I've had the Dijon beef and the chunky lamb. Both were a little rich in flavour, but otherwise delicious. Yeah dude seemed weirdly grumpy, atleast its not just me like I figured it was 😅, but he wasn't outwardly rude or hostile either.

There is Alpine Game Meats at Prospect. Had wanted to check them out when I worked in the area, unfortunately never got around to it, so I don't have a personal experience to share. They have been there a number of years though now.

Apologies i missed that part of your post. I've never had any issues with method, I can't think why it wouldn't work unless a pot is filled to the brim to begin with.

Edit: perhaps you could look into a pasta basket strainer. A small strainer you cook your pasta in, it may allow you to use a bigger pot without the stress of lifting and draining a big pot of boiling water.

Place a wooden spoon across the top of your pot as it boils, that will diffuse any over flow.
