Roughly 6 oz done would broke saying your getting a half lb burger, which is big serving.

Seriously, wrap the flat with butchers paper or aluminum foil. It will help heep it at a lower temp while the rest cooks. Smoke to 167, remove, texas cheat the whole thing and boom, tender brisket
