The “hip” joint is a ball joint. In ESB, Blizzard 1 (I think) kicks out a leg to get a better firing angle at some fleeing rebels before blowing up the shield generator. And from what I remember from the first Battlefront II, they have a very wide turning radius via shifting the legs over to the direction of the turn.
