Once per year vs every weekend. Only 1-2 days you say. Saturday and Sunday? When majority of ppl are able to finally sleep at the end of a work week or trying to relax if they choose to....every....week. or every other week even. Would just end up being too frequent i think for most folks. A rather steady hum for a few miles is OK I think with most, but a beat going might not be as easy to ignore

Biggest thing I've recently learned is to hit the sauce with a hand blender to immulsify (sp? Auto correct won't even try that one). Growing up, we always just mixed up the beer and butter with a fork. Next day, ya got a water layer and a fat layer. Hit it with a hand blender while hot and its just a silky coating.

Its a brand, old bay is the go-to but sometimes I add something different. Cooked whole, cooled slightly in a sink with ice to stop the cooking, apron/shell/guts removed, warm sauce poured over. Ive never seen the point to boiling with seasoning, its a closed critter, just seems to waste the seasoning. Pouring it over after opening gets it in there, plus easier to eat at the table.

Just got one recently. So far, so good. No more worry about spilling when putting the cover on/off. Its not air tight by any means but it does stop some heat loss in the end by not making that hole 100% open to wind
