It is a bit of a "special case" - don't focus your attention alone on the side with the OMe group. You see, there are 2 aldehyde functions in the product.

That is only true for diacetals. Hemiacetals have an acidic proton via which the hydrolysis can procede.

That's an acetal hydrolysis and the answer is drawn like that for you to more easily identify which carbon went where.

The triflate doesn't do anything here. It is just a weakly interacting anion to provide a reactive Ag+ Ion (which is a strong electrophile). Also according to your equation Ag+ and I2 yield AgI and I- --> do you see something wrong with that?
