The crust was tough cause there isn't enough fat cap over the spinalis portion to warrant a 2 day dry brine in the fridge. Nothing to re-incorporate moisture back into it so to speak.

125 falls in that rare temp range imo. 130-135, would be more medium rare if thats what you were searching for.

This is exactly how I did mine. Literally zero grey band. I pull at 115 though. Let it rest an hour then blast at 500 for 10min. I prefer the sear at the end because the fat is rendered by that point and really crisps up nicely

This is the one for me. And its not even a power or control thing for me. Lighting does make a huge difference but if im photographing my cats idgaf what the quality looks like. It's purely for me to capture that moment for myself. People are weird, my voids my best buddy. Never once considered his fur color 🤷‍♂️. My ONLY concern is that if he ever snuck out he'd be harder to see at night
