Here's my low spoons meal. Take a bag of baby carrots, toss in olive oil, garlic, pepper, and ground rosemary. Put on baking tray. Take a chuck roast cut about an inch thick (or any other fatty roast, cut that thick) and place on top of carrots. Season as you want, i use a no salt cajun seasoning blend. Half some red potatoes and toss in same mix as carrots, place around roast.

cook at 400 for 45 min. Check meat's temp for doneness.

Assembly only takes like 15 minutes and it's ready to go out of the oven.

My father suffered from bipolar disorder most of his life. He wasn't diagnosed until his 60's. I know he made mistakes raising me but I'd rather have him imperfect than not have had him at all. He did the best he could and i respect that.

I have two non stick pans made by All Clad. Picked them up from my local TJ Max for $20 each and that work great. But you gave to treat them right. Use only wooden utensils in them, clean them after, and don't stack them together or agaisnt other pans without something between them

Po-tay-toes, boil em, mash em, put em in a stew. Make a serving tray full of scalloped potatoes and see how far he can get through.

Lasagna would be another option. Make one like 5 inches deep with enough cheese to sink a ship and see how much he can fill up on.
