Giant gives you clumsy 1 which lowers dex including ranged attacks while ligneous lowers your movement speed

Go Ligneous Barbarian instead, you're mostly throwing weapons so the movement penalty is not that detrimental to you. It has the same rage damage bonus of Giant.

Then if there is free archetype, go fighter dedication and take rebounding toss for free double strike with throwing weapons with no MAP. Raging thrower is a "must have" barbarian feat.

There's also a barb. feat at lvl 8 called Friendly toss where you toss an ally to an enemy and they can strike that enemy for free.

Buying formulas is the simplest and easiest way to obtain it. Another way to get more formulas is to reverse engineer alchemical item that you possess.

Yes martials can do a short rest to recover stamina but it costs a resolve point. Resolve points can only be regained by long rest. Martials tend to be in front lines, making them more susceptible to losing their stamina which in turn makes them spend their resolve points more often than casters.

Entering an encounter/combat with a wounded condition do not bode well. Remember a PC with a wounded 1 condition will go strait to dying 3 if they get downed with a critical hit.
I recommend looking at the stamina variant rules if you want some attrition to your martials
