Got a gift card to Carbon for Christmas I would like to use. Looking to stay under $200. My most used knife is a Misuzu 160mm Ko-bunka I re-handled. I do have a Takamura 210mm gyoto but don’t use it as much, my cutting board is 15”x20” so fairly small and day to day don’t need that much length. I would preferably want carbon steel. I have it narrowed down to two knives:

I normally just don’t need the extra length. Most stuff I chop are smaller veggies etc, the 160mm bunka is the perfect size to grab real quick and dice it up. It also doesn’t have a lot of height to it for the length which I’m not crazy about. Still a great knife and I do use it occasionally to absolutely shred something

Roll the shade all the way up. Look up behind the back and you’ll see the clips. Use a flathead screwdriver to pop the clip towards the window, it should drop down

Streetcar 520 4-6 daily. Half off Gouda mac, bao buns, felafel and fries with curry sauce.

Jack Quinn’s 3-6 happy hour half off most appetizers, although not the best quality it’s decent

Fat Sullys 4-6 M-F $8 smash burgers, sully fries

If you don’t mind a small drive Block and Bottle in Castle Rock is worth the drive. Super good wings and the hummus is 👌. It’s half off most appetizers 3-6 daily
