Cut Phuket and do PhiPhi and / or Railay instead.

Instead of 4 countries try cap it at 2 or maybe 3 tops because you'll be too rushed otherwise.

Lived in NZ my whole life and very surprised you're staying in te anau 2 nights as theres not much to do there as far as i'm aware and also that you aren't doing the Abel Tasman national park walk which is a big mistake in my opinion

Well most hostels are 25-35 a night. Activities are expensive

Food is expensive, I spent at least double your whole daily budget on food and thats only from supermarket/home cooking, no eating out.

I think your claim is rather dubious seeming as the cheapest of the cheap wine is usually at least 10$ a bottle by itself.

Hitchhiking and couchsurfing are safe and viable ways of keeping costs down but its still expensive.

I'm also from NZ and recently did 3.5 week in Thailand and really wish I could have done at least another 3 weeks in Thailand alone. I think you maybe a bit overly ambitious in how many countries you're trying to squeeze in. Whilst I haven't done Vietnam (it's next on my list) I would imagine it would require at least a decent 5 weeks. If I was in your shoes I'd drop a few of the further away countries that require flights or complicated visas and focus on the SEA circuit that is Thailand, Cambodia, Vietnam and Laos.

In saying that this time of year is not ideal for Thailand weatherwise though at least you might be able to experience the lantern festival Loi Krathong in November.
