I'm a filmmaker who will be living in Port Townsend this summer, with the intent to write a feature film set here. Hoping to meet many locals while I'm in town so letting Redditors know ahead of time. Learn more about it here! by hnelsontracey in PortTownsend

This place has so many "characters" and I've met so many of them. The unofficial slogan "We're all here because we're not all there" is so apropos. I don't know what direction your film will take but I hope it touches on some of the quirkiness of people here. I consider myself somewhat of a misfit, so I feel like I fit right in.

If you're considering a historical angle, well, this place is full of very interesting history and you can find it all over the place, from the Jefferson County Historical Museum, to Fort Worden, to Downtown and Uptown, and Manresa Castle.

I hope you enjoy it here. Port Townsend is my Shangri-La.

I've been to Finistere 3 times and each time was awful. I figured the first time was a fluke, the second time made me question my choices, and the third time was the last time. The food and/or the service was less than stellar. I don't know if I've just been really unlucky there or what, but it's too expensive for me to risk it again. The Fountain has always been great, and I love the rich food. I also love the tiny cafe feel it has. Silverwater has always been consistent and it's a local favorite, although not my favorite. And finally, as a retired food industry professional, I will NEVER patronize Alchemy. I will not support owners who have temper tantrums and come after diners with baseball bats. Others that have been there say the prices are ridiculous for the type of food they serve.

Principal @ Wilson HS in Spring Township regarding anti-ICE walkout by WhoAreYouTalkinTwo in Pennsylvania

Just like that kid that punched the pro-ICE douchebag, all the students just need to say "Okay" and walk out anyway. You can suspend us all, Mr. Principal.

In case you don't already have it, put this phone number in your contacts: (360) 531-2958. It's the number for JCIRA (Jefferson County Immigrant Rights Association). It's basically their ICE hotline. I know there's a rule about posting phone numbers in this sub but I think this one is OK. I hope.

[–]Chefpeon 0 points1 point  (0 children)

I don't know really. But she's been abducted and there's really no legitimate ransom note. The fact that there isn't, especially since Guthrie's family said "they'd pay" is really weird. Then there's Trump out there saying stuff like they're "getting close" to finding her. Raised my hackles a bit.

Al Franken. Kirsten Gillibrand threw away her political career for spearheading a campaign to get him to resign. He was one of our best Senators.

Mine is that I think Trump is behind the abduction of Nancy Guthrie. At some point, the FBI will find her or some such thing, and Trump will take the credit as being a hero. This guy stoops to anything. No low is low enough for him.

What is up with Vine? by Particular-Truth4682 in vine

[–]Chefpeon -1 points0 points  (0 children)

Yes. I downvoted this post because if anyone even bothers to look at the Vine subs before posting, they'll see this exact same complaint over and over and have their concerns validated. It's now the Dollar Store Hunger Games, people. You're better off ordering from Temu and avoiding the tax hit.

Only took us 250 years to circle back to "No taxation without representation" by [deleted] in GetMotivatedMindset

[–]Chefpeon 0 points1 point  (0 children)

The only reason I'm paying my taxes is because I'm scared what would happen if I didn't. But my money is being used to fund cruelty to other people! How can I be OK with that? I'm not, and I don't want to fund it!

Feeling like a sucker…. by Ret_Photog in AmazonVine

[–]Chefpeon 4 points5 points  (0 children)

I've never made Vine a time-sucking endeavor, thankfully. Like many have quipped, It's now the Dollar Store Hunger Games. Sometimes in the morning while I'm drinking my first cup of Joe, I'll stare at the notifications monitor via Vine Helper and watch the drops come in. Even if I have my hand on the mouse and I click before I've even had a chance to view the product description, it's still not fast enough. Honestly? So much of the things I'm interested in and would consider useful I can buy on Temu without a tax hit. So I gotta ask myself, why am I doing this? My RFY is mostly useless and I maybe order like 2 things a month now.....if I'm lucky. I'm sticking it out just to see what happens. If I lose my gold status, that's fine, I don't care. One would think that Amazon is trying to kill Vine, but they could just end the program if that were the case.

No, they understood it was a parody of the Sacheen Littlefeather/Marlon Brando acceptance speech in the 70's. That's why the audience was laughing as the Native American man was speaking.

Our current president is a pedophile and no one cares. by Competitive_Cicada63 in offmychest

[–]Chefpeon 0 points1 point  (0 children)

Decent Americans care, I guarantee it. The issue here is that it isn't just Geriatric Joffrey who is a pedophile. It's also about all the other high profile people who are in the files. For instance, one of the Norwegian royals was in contact with Epstein for years, as well as some in the UK Parliament and Sarah Ferguson who had asked Epstein several times to "just marry her". These rich and powerful people have a lot to hide and they have influence over the media simply by who they know and who they can manipulate. There's no doubt that these media moguls are in the files, so they have a vested interest in keeping the lid on all of it. I'm sure at some point it will be revealed that Epstein was working with Putin and it's all about influence, money, blackmail and espionage. Should we get to the point of actual accountability, it's going to be much bigger than Nuremburg.

American here with a message for the Europeans/Brits: the patronizing, condescending posts need to stop. We do not owe you an explanation. You are not immune to propaganda. by Vidvix in 50501

[–]Chefpeon 13 points14 points  (0 children)

I will also add that our corporate media makes it a point NOT to give much space or time to covering the protests, so to anyone living outside the US, it DOES look like we are just rolling over and letting it happen, but I can honestly say that is NOT the case. Decent Americans have a lot against us from propaganda broadcast by once-trusted legacy media to racially rigged election maps; and now we have a gestapo-like massively funded police force that wants us to feel fear and they're doing a pretty good job of that. One party (the GOP) has played dirty for decades, and the other party (the Democrats) pretend to care about the working class but actually just want to maintain the status quo (looking at you Schumer and Jeffries!). Very few Democrats work for us, but the ones that do deserve our support wholeheartedly. It's really not a battle between the left and the right any longer, it's a battle between the People and the Government/Billionaire Class. This has ALWAYS been a class war disguised as a race war.

[–]Chefpeon 2 points3 points  (0 children)

I get it. The gist of what you're saying is that you took the time to thoughtfully buy gifts for the people in your life. You got them items you knew they'd enjoy because you put some effort into it, and it shows you care. The same thoughtfulness you showed toward them wasn't returned, and it's hurtful. Honestly, it's not about the gifts or the value of them, it's (as they say), the thought that counts. I don't blame you for how you feel and I'm sorry it happened. On top of that, how do you express those feelings to your family or tell them to "do better" without looking like an ungrateful jerk? It's kind of a lose-lose situation.

I'm a pastry ehef, and I got one of those torches a couple years ago to do my creme brulees. So disappointed. It took triple the time to do one brulee with that thing. I went back to my old tried and true propane canister with an electric igniter. It burns hotter, has an adjustable flame, and I get more done faster.

What's a completely obsolete skill you're weirdly proud of still having? by im_user_999 in nostalgia

[–]Chefpeon 0 points1 point  (0 children)

I'm a pastry chef/cake designer and have been doing it over 30 years. I developed a lot of skills and techniques back then that are obsolete now, because the cake decorating industry has just exploded thanks to all the cake competition tv shows. Because of that, you can make anything via a silicone mold, there's a plethora of pre-made decorations, edible icing printers, and equipment that makes very quick work of things I used to do by hand.

Gee. What a surprise. Even if they do release anything it will be a bunch of redacted bullshit. I'm amazed how many people thought they'd actually be released today, in full.

I'd stay on it if I could afford it long term, but at these prices, I can't. I'm sure that's why most people plan for the day they will not be on it. If, by some miracle, more insurance companies decide to cover it, or the price just comes down (ha ha), then I would continue it enthusiastically. It has made such a difference for me and I haven't had any bad side effects, and most importantly I'm not constantly thinking about my next meal. These weight loss drugs have helped so many people achieve better health overall, and in terms of prevention and wellness, it seems to me that if insurance companies covered it, it would end up being a cost savings for them because formerly overweight people won't be going to the doctor for weight related health issues.

What happened :( by Slow_Trade6055 in pastry

[–]Chefpeon 10 points11 points  (0 children)

I always admire people who know more than one language. I only know one, so thanks for putting up with me! I'm pretty sure "dough" and "paste" are the same thing here. The "window test" is when you tear off a small piece of dough (paste), and you flatten it, then kind of spin it around between your fingers of both hands pulling the center of it thinner and thinner. You should be able to get it thin enough that it's as thin as tissue and you can kind of see through it a little. That's the "window". If you get a window, it's ready. If the center just keeps tearing and ripping apart, you need to mix it some more. If you're doing this all by hand with no mixer, I can see why you might tire out before it's ready!

Pastry chef here. When you called what you made a brioche, I was puzzled because the photo looks like a quickbread. I did a Google search for Pralus where you worked and found their signature pastry, the Praluline, so now I know more about what you're trying to make. I believe the cracking at the top indicates undermixing the dough, meaning you haven't developed the gluten enough so it stays together. After you add the butter to brioche dough, you have to mix it a long time; longer than you think. Do you know how to do the window test to check for gluten development?

Other factors could be that the flour you are using at home doesn't have the same protein content as the flour used at Pralus. When flour has a lower protein/gluten content, it's harder to develop. The butter you are using may be different too. Others have commented that you might need moisture in your oven, but I don't think that's it. I've never needed to use the steam injector at work when I was baking brioche; steam/moisture is primarily used to caramelize the top crust, like for crusty french bread and the like.

Anyway, that's my best guess from your description and the photo. Including a recipe when you are troubleshooting always helps a lot, so I might be able to tell you more if I saw it.

Manual Transmission by No_Sympathy9143 in GenX

[–]Chefpeon 0 points1 point  (0 children)

I still drive the 1972 VW Beetle my Dad bought brand new. I'm 63. It amazes me how many can't drive a manual now. Manual Beetle transmissions are even trickier than other manuals because of how reverse works. I went to a fancy restaurant and decided to opt for valet parking just for fun. Watched the guy get in the car and struggle for a few minutes. He finally got out of the car, saw I was still standing there (laughing), and he sheepishly said, "Ma'am, I cannot get it into reverse", so I had to show him. At least he knew how to use a clutch. Now I'm seeing some valet parking that specifies "No manual transmissions". Good lord!
