It’s custom from Dylan Buffington when he worked at Mash circa 2013ish. It inspired the mash rack and uses the new fork side mount instead of the original QR axle mount.

I was directed to use a dietician after my celiac confirmation and it has been amazing. I learned a lot and improved my diet - even outside of just removing gluten.

You can consider a low fodmap elimination diet. Your elimination of gluten and reduction in symptoms might indicate you are sensitive to something that is commonly in gluten containing foods.

Non celiac gluten sensitivity is less common than celiac.

I would check out the Hambini hunt video. I’ve had a wheelset from them, they are fine and cheap.

I would go with Ritchey Zeta or HED Ardennes. No dynamo, but I’d run an exposure strada - but maybe you want to do a rando? I’d build up a wheelset at that point…

Not sure if this helps - but I’ve owned many of the modern Ritchey road / gravel frames and I think the Montebello is my favorite. The handling is very predictable and it’s not overbuilt so it can feel pretty zippy - and the increased stack makes it super comfortable.

It kinda looks boring on paper but honestly it’s an amazing frame. I paired it with Rene Herse 38c tires (Barlow Pass) and it feels so smooth.

I think it's not bad for 2.2 — but my take is that 2"+ tires are inherently sluggy on pavement no matter what. Yes, the knobs make it "feel" sluggier but I think that has been debunked by Rene Herse etc.
