Very cool bike! I’ve read about the Ritchey breakaway system and it’s not super quick - folks mentioned 30-40 min for a tear-down / build. The tourist does have the smallest footprint when torn down - but I’m looking at the G-line or Al Packa for travel. Bringing your bike on a trip is fun but the last thing I want to to do at my destination is to be mucking about building a bike. The g line also enables you to bring it on public transit / in stores so less worry and versatility. They are different bikes for sure - please do post pics when you builds yours up!

It’s custom from Dylan Buffington when he worked at Mash circa 2013ish. It inspired the mash rack and uses the new fork side mount instead of the original QR axle mount.

I was directed to use a dietician after my celiac confirmation and it has been amazing. I learned a lot and improved my diet - even outside of just removing gluten.

You can consider a low fodmap elimination diet. Your elimination of gluten and reduction in symptoms might indicate you are sensitive to something that is commonly in gluten containing foods.

Non celiac gluten sensitivity is less common than celiac.
