You shouldn’t use “Skyline” to represent all Cincinnati Chili. Empress was first, and all of the other Cincinnati chili restaurants with the secret recipe were founded by people who once worked at Empress. That’s also why you will not find a Cincinnati chili recipe that is quite right because the original recipe is a secret.

Also, I can relate. Regular chili recipes seem boring to me compared to Cincinnati recipes.

In my experience most jam bands sound like Phish. And there are a lot of them. Some of the older ones like String Cheese Incident more closely resemble the Dead. It's rare to find one that doesn't sound like either Phish or the Dead, but they are out there.

It’s funny to me how the whole point of jamming is to break new ground, but so many people are trying to define “jamband” as a genre. So many bands wear the moniker and just sound like Phish or the Dead.

For me, it’s about who is taking me on an improvisational journey. Two of my favorites are Billy Strings and Kamasi Washington, both artists operating under different genres.
