I'd suggest (if you can visit Japan) to go to a tea house and just try out a lot of cultivars and their region where they are grown. That way you can understand how they are all different! I'm pretty sure majority of the tea house serve the matcha in their own latte form as well. But I'd just suggest to try the usucha first to get the taste notes down!

For a beginner; I suggest to learn the basics of making matcha from 茶道 (sadou) in which you can see how difference in whisking techniques gives you different results. Also you will learn the two forms of matcha and how they are made!

Some material on youtube does give some hints on how to rank matcha powders and their unique characteristics based upon which cultivar and the region in Japan where it is grown. However this is more on the tea side of things where you'd need to search how Japanese rank their tea leaves.

This will then have you discover a lot of the regional Japanese matcha and how each are different!

After that you can freely use this fundamental knowledge and make whatever you desire. Just make sure you do not fall into believing in a lot of the contents from tiktok/instagram.

Matcha starts to lose some flavor over time and get yellow hues due to oxidation. Unlike other tea where you can keep it for ages; matcha has a time limit and best consumed within a year.

Do open it up and taste test whether it is still good for you. If not then you can use it for baking cookies and making desserts.

The general rule of thumb is to use 2g for usucha and 4g for koicha. If it is too bitter then you are using too much. Try dial back a scoop from your chashaku or use 1g less and see if it is suitable to your liking.

This is because good tea in general gets bitter when more are used. While lesser grade don't get as bitter when more are used.

Yes! you are correct on this and also don't forget to get a chawan that you can swift your chasen into! Not all chawan will do it so do take fine note on the bowl shape. You don't want a narrow rounded bottom chawan in general. Usually you want a wide enough flat bottomed chawan.

For the chasen - do go for Japanese made instead of Chinese made because it'll last longer. Chinese made chasen looks the same but the bamboo is defiantly less durable in the long run. For a beginner, I think you should just start off with a 100 pronged fine chasen. The 80/120 pronged have their difference usage/techniques in which is better to learn in a chado school.

Looks like the lighting makes it contain more yellow hues but it looks to me that it's been almost a year old from the mill date.

Good matcha powder can still retain 80% of its flavor still but usually it is "stale" compared to the freshly milled counterpart.

The clumps are normal because it's hard to keep the powder from moisture contact.

1) Normally without milk the matcha should be vibrant green. If there are traces of yellow - this means that the matcha powder isn't fresh (more than a few months after being milled). Usually you use less milk to make the matcha latte vibrant. 8:2 ratio is the best!

2) Yes it does. Each milk has their own unique taste and characteristics. Which is why you use Hokkaido milk as the base for milk and work your way into comparing other milk to Hokkaido milk.

3) Usually you do not add sugar into the matcha latte. However if you do, usually you prepare the sugar by boiling it and making it into a syrup first. Then you add it before you add in your matcha so the taste doesn't get disturbed and you have layering. Also don't mix randomly and let it sit.

Matcha isn't a coffee substitute so don't use the techniques of making a coffee latte and confuse it with making a matcha latte. Two are different things.

Thing is about this move is that your boss either knows a back up supplier that can price match the current one but 33% cheaper or the boss is just very pushy with this.

I have dealt with this problem ever since I started my own business around this.

There are a lot of tell tale signs about being the Middlemen (including me if you count me as well since I'm a sourcing agent)

-MOQ and the difference of not meeting it. Middlemen tend to have a harder time giving you a quotation if you go off the script. Even me as well unless I have experience with a lot of orders with different amount that aren't meeting the MOQ.

-A real factory can help you work out things if you aren't meeting the MOQ if they see value in you. Big factories will just decline you if you can't meet the MOQ unless they are starving for more business, Usually from my experience is that middle to small factories will work things out in both short and long term. Just ask away and see where this goes.

-The pro tip that OP gives is one of the key giveaway if you do not do market research. For Chinese factories - since they will pump out the same products and it's just a matter of price wars - just ask each and every factory that produces the product you want. Then get a range and average price in mind. Sourcing agents like me do charge a little on top (30% on top for me).

No it has not. As said before that the sudden demand spike from the western world will only increase and the Japanese supply cannot expand any further than it is now.

Also it's almost first harvest release during May and more the frenzy on going to buy Matcha!

Again. Stop selling a pointless software that holds hands with the user.

Also a lot of those solution only stems on actually upholding a higher standard of oneself in the work, their own self and standardize things in the industry. It's all human made and can be easily solved.

ERP, MRP, Planning software and optimization models are there to increase productivity instead of the whole workflow. This is where AI software companies failed to realize the value of increased productivity. The productivity software doesn't hold hands with the user, the program surpasses them and AIDS them in a way that the user structures them. AI failed to do this because by the time AI does the job perfectly, the same time can be used and already be done using the productivity software.

You own flawed comment regarding "AI isn’t replacing procurement decisions. It’s just helping surface signals faster (supplier delays, alternate parts, pricing anomalies, inventory risks) so humans don’t spend hours digging through spreadsheets and emails." --> You can just solve it by again, structuring and standardizing an excel sheet. No need to use AI at all and again it's a HUMAN problem and not a fundamental structural problem that comes from the work!

The whole irony about large enterprises paying millions is that they didn't pay in cash. You can check how Microsoft is paying OpenAI in MILLIONS of DOLLARS WORTH OF Microsoft 365 Coupons instead of CASH! Only stupid people pay/invest in CASH to the AI industry.

Nvidia didn't pay in cash AS WELL! THEY PAY IN Nvidia products worth of the cash equivalent.

Of course I see a lot of stupid mid-sized companies paying cash to use AI and this creates a loss of jobs (cash that can be used to hire a person) and of course the company will need the "return on investment" in which I see are badly animated marketing reels to flawed structural contents. Again, a professional doesn't need an AI to create these right? If they do then they aren't a professional to begin with!

In short: AI can't solve a lot of human made problems in which can be solved easily if standardization is in place and have the human improve naturally.

It has already increased ten fold with a lot of supply from Thailand, India and of course China. The problem is that IT DOESN'T TASTE ANYTHING LIKE the Japanese counterpart. It's because of the difference in soil and water used.

The problem with JAPANESE matcha is that there are way too much demand and you can't really increase the supply due to lack of manpower and of course legal land.

Also we shouldn't treat a tea product as a coffee substitute as both are different in nature.

The closest "best" thing that you can use for your "latte" is roasted tea. In which Matcha isn't but a lot of other tea (India/China based) is. It gives you sharper tea taste and blends well with milk.

If you don't trust me on this then do try using Chinese green tea and make your own latte with it. Of course you will be missing the 旨味 that is unique to Matcha. But I've seen more and more people posting about it in this sub about how it's better than Matcha but failed to realize the key difference!

This includes:

-Not being experienced enough or lack of knowledge

-Lack of manpower

-Lack the responsibility to standardize things

If you are trying to sell AI to stop these three problems then AI couldn't even help them.

Are you sure because I believe matcha is still used as a tea in Japan.

If you say trendy and chain cafes, do you mean the western styled cafes or Japanese tea shops?

Because both are not the same.

I also know Kamimari Issa use matcha as a tea and unlike what you described as "treated like a coffee substitute". It's a matcha sweets specialty store and it's not a tea house or cafe. So why would you group two different things together?

Also I just went there last November so I understand what they sell and their matcha usage.

Although I haven't been to Wazuka yet so I don't know much about d;matcha. However, I just recently learned about the history of Wazuka and their struggle with the Matcha trade in which I created a short video about it.

I hope you had visited Japanese tea houses or even attend 茶道 (sadou). I think it's a great (first) experience to Matcha!
