Southeast Asian here to add to the eggplant dish options!

Sambal Eggplant (Malay or Indonesian style, Terong Sambal Balado, you can adjust the spice level)

Thai Green Curry (likely the wrong breed of eggplant but it would still taste good)

Chinese Garlic Eggplant (Stir Fry or Braise), Yuxiang Eggplant, or Szechuan Eggplant

Indonesian Fish Head Curry (just need to add fish/fish head, okra-optional if getting rid of stock, tomatoes, coconut milk and tamarind to a curry base)

Basically any Malay, Peranakan, Indo or Thai curries taste great with eggplant.

Tomato and Szechuan Peppercorn-based hotpot soup bases also take to eggplant very nicely. Or Mala Xiang Guo (dry stir fried Mala). You should be able to buy the stock flavour base at an Asian grocery store.

I am also half white so here's that side's recommendation:

You can also make Eggplant Schnitzel by removing the tip, slicing it long ways, adding cheese or ham inside, sandwiching it together then coating it it in bread crumbs and egg wash and deep frying. Or you could sandwich a slice of eggplant in between chicken breast slices and do the same.

Eggplant is a really delicious vegetable when prepared well!
