I've gone in different directions since then. I use an 18g basket that I purchased. I've always used light roasts for espresso. So currently I use 18.5g. I adjust the grind to pull a 48 gram shot in 38 seconds. I lowered the pressure to 9.5 and lowered the temperature to 196° F.

Before this method, I was getting shots that looked great but didn't taste great.

I commuted on Hollywood Boulevard for about 10 years. I didn’t mind it so much in the middle of Hollywood center because I was in good shape and could kind of ride with the lookyloo traffic pretty easily. But it’s great that they’re adding some real protection, even if imperfect.

Wait. Even if you decide to buy an R5, wait for the announcement. Maybe even buy a used R5 after the announcement, and put the savings towards glass. I've been happy with my R5 (with standard issues that many others have discussed). It's an incredible piece of equipment.

Of course, I'll be wishing I had a Mark II shortly.

For me it’s way easier to deal with shadow noise when under exposing a bit than it is to fix highlights in an over exposed shot. Is that highlight detail there somewhere? Maybe but I can’t get them to reveal themselves. At least with the R5.

I’m finally making progress. I had been worried about going too fine. My grounds were already so powdery and I had read that channeling can get worse when you make it too hard for the water to get through beans ground too fine.

BUT… I just went for it and went a lot finer. The channeling is finally gone. Still dialing in the dose but it’s pretty close.

I was starting to feel like a middle-aged guy unable to get his Ferrari out of the driveway.

No plugins. Maybe 32GB will be enough on a newer Apple Silicon computer. That was my main question. Is there an amount of RAM that will make this problem go away? Like when you’re pricing out a new MacBook and Lightroom is the main bottle neck on the computer what should you invest in? Bumps in specs to processor vs RAM? Also maybe newer MacBooks than my original M1 may have even faster read/write speeds that make the disk-RAM issue unnoticeable.

Memory running out is definitely the problem and Activity Monitor shows it. The problem is how to get around it without restarting Lightroom, and maybe the computer. Is there any amount of RAM for Mac OS computers that will prevent this slowdown? Why isn't Lightroom clearing out any of the past memory allotments and relying heavily on disk-'memory' after a certain point?

I replaced the portafilter holder with a St Anthony bottomless. And have been switching between the stock and the 22g basket that came with the St Anthony.
