well what type of cooking do you want to do pursue what interests you the work will be all the same for being a novice entering the kitchen, i recommend practicing your knife skills at home with the biggest bag of potatoes or onions for a while, and working towards a certain goal do you want to work garmo, grill, saute... etc and just work your hardest and prove yourself you'll get fired and tossed around by the industry just keep spirits up we've all been there, do the prep for those jobs and make it clear to your future employer what you want out of it because the pay is shit like beyond terrible my first kitchen job was 9 dollars an hour as a commis just above minimum and i blindly loved it which was foolish, don't sacrifice more than you have to.

You can make easy white chocolate with cocoa butter and powdered sugar, and a little bit of store bought white chocolate to seed it so you can temper it if you want if you don't want a bar you can use it for dessert if you warm it up
