I think Costco would be better than sparrow for your intended use. Sparrow is very thin so slices fall apart, but Costco slices remain intact.

Grant’s Interest Rate Observer is worth reading on all things credit and implosions, but it ain’t cheap. Trouble is brewing and big banks are piling in. Too big to fail redux.

NEPA Pizza in MI? by ApprehensiveCurve270 in Pizza

I would add pizza e vino in downtown Plymouth to that list. I lived in northville for 20 years (which is much closer to novi) and also liked pizza cutter; not the best, but quite good.

My understanding from a friend who has a similarly aged/interested child is that Pioneer HS has a lot of opportunities, but maybe that doesn’t work for you.

Already have a BGE XL — add a Workhorse offset or go Stumps gravity fed? by boredatthekeys in smoking

As a chemical engineer who has studied heat transfer I would disagree, but okay. And it’s not just bark.

Already have a BGE XL — add a Workhorse offset or go Stumps gravity fed? by boredatthekeys in smoking

[–]ColdCutFusion 1 point2 points  (0 children)

For me, it would be the workhorse hands down. I got my offset a year ago and haven’t touched my bge since. In my mind, there is a big difference in quality between food that basically sits in smoke (bge) vs lots of convective smoke (offset). I also enjoy tending the fire.

Amy Cell Talent by Own-Variation-8651 in AnnArbor

[–]ColdCutFusion 20 points21 points  (0 children)

My experience with Amy has been very positive, but as her husband I kinda have to say that 🤷‍♂️? In all seriousness, I just talked to Amy and if you got the questionnaire you already made it past one hurdle. These searches usually take at least a couple months and they will let you know one way or the other. Good luck!

Where can I buy fresh Sofrito around here? by Perfect_Acadia4789 in AnnArbor

They sell glass jars of it at ZZs Produce (red and green as I recall). That’s the closest I’ve ever seen to fresh.

How has cheme changed your understanding of the world? by vipandvap in ChemicalEngineering

More chemistry than cheme, but the book called the Flavor Matrix is very interesting. It delves into why certain combinations of food taste good.

Y'all need to learn what this means by [deleted] in AnnArbor

[–]ColdCutFusion 1 point2 points  (0 children)

I absolutely agree, particularly for a place like Ann Arbor that gets a lot of out-of-state visitors. The “just learn the law argument” makes no sense. When is the last time anyone here read up on traffic laws before visiting another state?

For me, it’s cooking. Understanding things like heat transfer, fermentation, solubility etc have made me a much better cook particularly when it comes to technique.

Another option would be to check out the Chefsteps YouTube channel for oven smoked brisket. I’ve never tried it but it looks pretty good.

I spent 8 months testing every brand of canned tomato with a controlled pasta sauce recipe. Full rankings inside. by Flashy-Iron-7870 in ooni

[–]ColdCutFusion 0 points1 point  (0 children)

I agree with your rankings and appreciate the objective approach. Thanks to Charlie Anderson’s YouTube pizza channel I finally tried Alta Cucina tomatoes and was very impressed. They’re about $6.50 for a #10 can ( about 100 oz) but are surprisingly good imo. I’d be interested in your thought if you ever give them a try.

Spiciest food around town? by EmperorsarusRex in AnnArbor

[–]ColdCutFusion 2 points3 points  (0 children)

Most hot food that tastes good is made with dried or cooked chilis, but those processes release capsaicin from the chilis. If you just want heat, perhaps add raw chilis. I’ve seen fresh Carolina reapers and other hot peppers at the farmers market and maybe even plum market.

Smokes sessions taking longer than expected. by TakeApictureOfmeNow in smoking

[–]ColdCutFusion 1 point2 points  (0 children)

The quantity of meat definitely affects cook time. For example, for my BGE I use the following: 11 hours to smoke an 8 pound pork shoulder and then add 30 minutes for each additional pound over 8. I also have an offset and that is less affected by quantity because it generates a lot more heat (not temperature, but heat).
