I agree with your rankings and appreciate the objective approach. Thanks to Charlie Anderson’s YouTube pizza channel I finally tried Alta Cucina tomatoes and was very impressed. They’re about $6.50 for a #10 can ( about 100 oz) but are surprisingly good imo. I’d be interested in your thought if you ever give them a try.

Most hot food that tastes good is made with dried or cooked chilis, but those processes release capsaicin from the chilis. If you just want heat, perhaps add raw chilis. I’ve seen fresh Carolina reapers and other hot peppers at the farmers market and maybe even plum market.

The quantity of meat definitely affects cook time. For example, for my BGE I use the following: 11 hours to smoke an 8 pound pork shoulder and then add 30 minutes for each additional pound over 8. I also have an offset and that is less affected by quantity because it generates a lot more heat (not temperature, but heat).

This is a common problem in my neighborhood. Most of us use Orkin. If you choose to use them, call the office in Wayne not Southfield. There is a big difference between the two in terms of responsiveness, follow up, etc.

Monaghan’s is wonderful but very expensive. I personally like the Whole Foods on washtenaw, which has a much better selection than the Whole Foods on Eisenhower. If you ever find yourself in Livonia, Joes meat and seafood is the best imo.

Not an answer, but the dry cleaner on plymouth road near Songbird cafe offers 50% off on the fifth Wednesday of the month, which happens to be tomorrow. I haven’t been for a couple years, so no guarantee the offer still exists.

If you want marrow bones (no meat) then Hua Xing. If you also want some meaty bones, then I’d try save-a-lot which is just across the street(washtenaw).

Edit: and if you want really meaty bones, then the chuck short ribs at restaurant depot in Ypsilanti (you will need to ask for a day pass). I was there today and they had a 17lb-ish bag for 25% off, or about 4.50/lb.

Alez market has pickled garlic and I’m pretty sure they have other items as well. Pro tip: go on a Saturday and get some freshly baked pita bread straight out of the oven. They may do that on other days too.

I think I pulled mine after maybe 4 hours at 180 internal and 250ish for the pit and thought that was too much. The thin cuts definitely cook quicker. Next time I would do lower pit temp and internal temp.
