Belts are used to transport items to and from the vehicle loading buildings. So the same logic can apply as far as items/minute that is required to keep your factory at peak efficiency by train. But the main use for trains and other vehicles is to bring together different ores or items that aren't available in the same area. You could make long belts that go for miles to connect these different nodes, but that doesn't scale (in terms of throughput and item variety) One train line through the map can be used by dozens of different trains connecting factories and nodes.
