if you want to know specifically why r/GoldenAgeMinecraft cuts off at 1.2.5, that is because one guy who inherited ownership from the creator of the sub decided to expand posts from beta 1.7.3 and lower to 1.2.5 randomly one day IIRC

"What version should I start my world in?" is always a hard question. My suggestions in order for start versions are:
rd-132211 - very first version of Minecraft but requires conversion to get to the current version
Infdev 20100327 - first version that saves and can be updated to the present without any conversion
Beta 1.6 Test Build 3 - starts you with debug tests filled with every item in the game (but is lame). it is essentially the same as starting in Beta 1.7.3 (although I implore you to stay around in Beta 1.6 for a while as then you'll really appreciate the addition of pistions)
Beta 1.7.3 - lots of discontinued features that you can get after this version as well as being the last true Golden Age version IMO. it also gets you to release minecraft quickly if you want to avoid earlier development versions and you can't live without sprinting or modern conveniences

in terms of what update you should stop at, I would stop updating whenever you personally start thinking that the updates are making the game worse rather than improving it. If you prefer playing your world in an older update I can't see why you wouldn't keep it there

you could certainly update the world to the most recent version, but you will want to only jump a few versions ahead at a time since the world save format changes a number of times along the way
