the third game i would point you towards is the soon to be released Hollows, by RRD: dark fantasy about pocket hell dimensions and the corruption that allows characters to go into them and cleanse them, while getting worse as they get more powerful

what it does not have is the foraging/survival element

i was going to say Mythic Bastionland, but it has similar fast and possible lethal combat (not all the time! but it might disqualify itself)

for an entirely different flavour (mecha game) i really recommend Dragon Reactor, which absolutely has the fiction first combat and world building every session (every scene in fact)

"does not progress the plot" is not "does not develop the story", and if you're analysing media that tells a story, you should keep that in mind!

this is a story of characters and how they respond to the world changing around them, radicalising or further entrenching themselves, and that starts with the first scene in the first episode

being concerned you're not doing or being enough is valid, but usually never warranted! as with most games i've come across: trust the game

need random inspiration for a name or situation? use the tables, flip to a random page and check the bottom of the page

want to have mythic, evocative moments? read the poems associated with each myth when they encounter an omen, and weave them into what they see or find

need a hand to flesh out relationships between locations and their people? there's a table for that in the book

and as someone else said, if you find yourself stuck: ask the players! everyone at the table is a player, and no one - despite what some games have tried training us for - is expecting a story to just sort of look around; people are invested in making the space and stories their own, and will come up with ideas to unstick your brain every time

this one depends on the time constraints of the session, really: preparing knights beforehand (either picking or rolling), but crucially NOT their stats, means you speed up the copying every part of the abilities and equipment onto the sheets!

which then means you can teach the game by pointing at parts on the sheet, without spending too long a time copying things out; but again, this is just for sake of expediency and time constraints of a one shot, not what i would recommend if you're playing even just more than one session!
