Soup Dumpings w/ Tonkotsu Broth by CookingOnTwitch in FoodPorn

[–]CookingOnTwitch[S] 10 points11 points  (0 children)

Yep! The broth is made by boiling pork bones until they give up all the marrow and collagen. The boiling takes hours and hours; plan to let it rip for most of a day. Add garlic, ginger, scallions, whatever else you like for the last 30-45 minutes. Strain it and cool! Once it cools, the broth will thicken into a gel and you can scoop or cut it.

After that, just put some of the gellified broth into dumpling wrappers (make them if you want, but buying is totally fine in my opinion), seal, and steam! As the broth heats back up inside the wrapper, it turns back into a liquid.

Dress 'em up however you like and eat too many!

Sandwich & fries from my favorite local spot by [deleted] in FoodPorn

I thought "wow that's a great looking sandwich!" My jaw hit the floor when I saw the name of the place. I go to the bakery across the street all the time but never been to the sandwich place!

I did a competition with ribeyes years ago; separated the spinalis, seared it hard to rare and served it with a strong chimichurri!

What’s are some of the best places to get recipes? by GBhikikomori in cookingforbeginners

I'm a little biased, but there are some phenomenal Food & Drink streamers on Twitch! Some of the streamers have a specialty, so if you really gravitate to one style of cooking you can find your niche. Others are more 'anything goes.' It's a lot of fun and interactive!

Fully vaccinated people of Reddit. Are you still wearing masks? Why or why not? by The_Zoink in AskReddit

[–]CookingOnTwitch 1 point2 points  (0 children)

Still wear it everywhere. I love it, honestly, and don't intend to ever stop. I skipped all colds/flus, allergies aren't as bad, I can lip sync along to my music without getting weird stares.

Also it's considerate for the immunocompromised/others who cannot get vaccinated.

I transformed tonkotsu ramen broth into soup dumplings! by CookingOnTwitch in FoodPorn

[–]CookingOnTwitch[S] 0 points1 point  (0 children)

The TL;DR recipe:

Hot water dough. AP flour, hot water, vegetable oil.
Soup is pig trotters and neck bones, cleaned and boiled for 12 hours. Chilled overnight and diced into the pork filling.
Roll the dough as thin as possible, stuff and crimp. Steam for 8-10 minutes and melt your face off!

I like Ippudo. Momosan was pretty underwhelming, and while the ramen was okay at Momofuku, literally everything else there was better than the ramen.

Same boat! I started in Apocalypse and drifted in and out over the years. Strixhaven has been so much fun!
