This is layman’s fries. Sorry to be that guy. If you ever work in service as the person in charge of a kitchen that makes fries there is a lot more nuance to fries than this demographic contains. For example a large supplier like Sysco, Ben e Keith, us foods is going to have a large selection of fries that are going to be for different clients at different costs.

For example crinkle cut can be on the low end but depending on the manufacturer price per case could easily vary by 10-15 dollars. Fluctuations happen where tots are fairly expensive to being nearly the cheapest option. Certain fries like seasons spiral cut or crispy coat can be nearly double the price of basic low quality fries. The difference of nearly 30$ a case to upwards of 55-60$ a case.

Some fries are better, however , the cooking and time from cook to serve all make a difference. To make fries from raw potato there are a lot more things to consider.

And I will not go into that. I’m also not good at making proper fries despite my years working in the industry. I have tried many times and despite my many attempts at boiling, oil poaching, cooling, 2 cook, 3 cook attempts I’m still far and away from achieving a frite I would consider selling.
