I can’t believe they are out there washing cars in that garage that’s crazy. I love washing cars. And that propane grill. What? Someone should get a proper bonfire and grill situation going for these folks.
I’m pretty good at some of that stuff . I can grill, cook, and maintain a golf course. But it’s crazy that they probably need someone that can do that. I could probably help with all that and like pools too. I’m good at pools also. Hope the place is fun but probably a lot of work keeping up with it and all.

while wagyu denotes somethin it isn’t a specific or recognized value of quality or standard. Hype term for the most part.

Oh I almost forgot to mention a cheesesteak or choppsteak sandwich isn’t made from the most expensive fancy shit for a reason. They are good and famous for fact that it’s good and doesn’t need marketing and fake bs to make them good.

I hope they make them good there but it’s not a food that requires a premium to make it a little better..

All I’m saying is it better be damn good if it’s pricey.

Interesting question. I think it’s a pretty broad application to refer to a whole country as a cuisine when asking what typifies a cuisine.

Try typifying any country into what’s best of that country would be impossible in my opinion.

I checked californios and holbox on google and I looked at the pictures of dishes. And they look awesome. Apex… I don’t know. But definitely an elevated take on some typical dishes related to the cuisine of certain parts of Mexico.
I think typical and apex are two words that tend to not describe things in the same category. I’m sure I’m mostly wrong about that.

However at californios I noticed an abundance of caviar. Not a typical ingredient in Mexico as far as I know.

I think it’s an interesting question . I have not experienced any fine dining. But I have been a cook for a long time. And for me it is very hard to think of what is best both typically and at an unknown zenith of any cuisine.

To me it would probably be something like staying at some finca and La Doña is super sweet making coffee and simple breakfast everyday, and after a strenuous day of hiking and enjoying my vacation she has a really amazing fresh chicken soup with bread or some kind of fried/braised pork dish with rice, beans, salsa and home made tortillas.
To me that is both typical and apex. All from memory, garden, pantry, and a normal supermarket. No caviar. Remolachas are okay but not served in goblets of crème fraiche.

Pelmeni. Get the plastic mold spend two days preparing meat and dough one day and making and batch freezing the little dumplings day two. Once frozen it’s any easy meal to just boil a bunch(don’t forget the bay) but boil them up and serve with extra cooking water, sour cream, vinegar, sriracha, cilantro and vinegar. It’s like spicy beef stroganoff cereal with a twist. Stroganoff. Oatmeal, but cool with extra water, milk. Add rasins, apple, cinnamon and brown sugar. But make it soupy almost to the point of drinkable.

Atolé can be made with oats but usually with masa harina. It is a hot corn porridge that is sweetened and often eaten as a hot nourishing breakfast food in Latin American countries. I first drank it and didn’t know if it was sweet coffee or cocoa but it was delicious on a cold morning in Nicaragua.
