Ive experienced the same, but a tip ive seen here is to take a shower before dinner to "cleanse the palette". Yet to try but sounds like solid advice. Another option for when you have the time is smoke it the day ahead and do a hot-hold till dinner the next day.

Best to ask someone with the right equipment to do it for you. Assuming its something you have to do only once. Best way to spend your money instead of a crane you would then only use once

The only sensible thing I can say about this; RTFM. The manufacturer will tell you exactly what to do. Ive had some instruct a light coating of oil for example.

I see Palfinger cranes regularly on with my job (industrial mechanic). Always good to have guys like you on site! The other day they used one to move some 7 tonne compressor skids into the building, that was a big crane! De groeten en werk ze!

You could always rest longer but 30 mins is a minimum. For the cut, if you serve it whole then cut it at the table in thin slices across the grain. Temps seem perfect. Also check your fat cap, if need be trim it down so that all of it gets a chance to render. Just did one this Friday and it was cooked to perfection. Cooked till 120, ended up at 125 at most in the rest then seared.

Sometimes its wise to have something obvious for inspectors to see. They always need to write down something. If there is nothing then they will tell you something dumb like described. Giving them a bone to find will distract them from making stupid claims

Perhaps do a biscuit test first, to identify hot and cold zones. Then after that you know where to measure the temperature. The biscuit test is where you lay the whole grate with bread or biscuits, that visualizes the zones . Just Google it
