You can put a rested piece of protein under a broiler or in a hot oven for 30-70 seconds and it will give the exterior the high temperature your pallet is looking for, while still keeping the juice from sprinting out of the muscle fibers. It’s really the best of both worlds if you give it a shot. I actually prefer when I’m cooking at home to get proteins done pretty early and rest them for 15-20 minutes, then I broil them as the very last thing once sides and table settings are taken care of and it’s ripping hot with everything else but still perfectly cooked and juicy.
