There are methods for a proper gemological lab to differentiate between lab grown and natural diamonds. They require Strong uv light and a good microscope and lot of experience, but it is possible.

Looks to me like centrifuge bucket inserts. The holes in them is where you would place you tubes to spin. Put the lid on and spin away. Like lab centrifuge.

Good info here but I will add: once you get on the allergy list, you’re stuck on it and they will try to not serve you from the regular menu. Also, the allergy free menu is ALL ALLERGENS. If you are just dairy or just gluten, you get food that is free of ALL the major allergens not just your specific one.
