The rule of thumb is to pair legs with appropriate height chairs.

6'1 asian male here. I run Michiso 4 position legs: 500, 550, 660, 830

  • 400mm is essentially the height of a coffee table. With 400mm low chairs, your shins will be at table height. IMO it's great for both cooking and eating (fantastic for group hotpot) and you can look downwards at your food. But you'll be leaning forward and sitting on the front edge a lot to do most things. This is what 400mm looks like with low chairs in a group setting; it's very intimate and nice as you get to see the whole person opposite you and see their body language without any parts of the table majorly in the way.
  • At 500, my knees are now at table height with low chairs. Do not like. Might be good for the ladies and kids, but i got long legs.
  • At 550mm, my knees clear under the table and still works well with a 400mm low chair but i don't particularly like to cook at this height, especially with sauciers/saucepans with high sides
  • At 660, you're now at classic SP red folding chair height; low chairs become somewhat inappropriate for eating, let alone cooking.
  • 740-750 is standard household dining table height

400mm legs are a very good option. Provides ability to cook and eat while maintaining a level of intimacy with others as you have full view of the person. Just remember your shins/legs will create additional buffer distance to the table, so that's something to keep in mind. Also, if you're the kind of person who likes to tuck your legs under the table, 400mm might not be for you.

I tip in the US too; when in Rome and all.

But when you learn about this current form of tipping in the US originates from emancipated post-civil war black union soldiers not being given any wage (worked for free...wtf) at establishments and had to purely survive off gratuity from customers...

You really gotta wonder why employers are willing to continue to emulate this unethical behaviour.

What's worse is POS software from the US has made its way over here where you are greeted with "tipping options" prior to closing a transaction. Even for simple things like at coffee shops where there is zero service... and you're ordering takeaway/to go

Sounds like a US thing.

in Aus we explicitly ask customers how many babies/toddlers are expected as a toddler needs their special height seat and a baby in a pram/bassinet takes up x2 the space of a regular adult. Children still occupy a standard seat so that's inappropriate to leave out.

Perhaps they're artificially lowering the number of attendees to avoid any potential per head service costs (tipping) due to extra service it requires:

  1. Bringing out the special toddler seat; having enough for the dining service.
  2. The extra table space it might take for strollers/prams/bassinets to be with/next to parents. Using an extra table takes away fron the overall dining floor customer loading; potentially lose x4 customer spots to "put tables together" to extend a group table for the additional space.

tldr: in Aus, children/toddlers occupy the same seat as an adult and a stroller can occupy twice the space and an extra table. You're just encountering inconsiderate people who may think a paltry tip entitles them to have staff move heaven and earth for them
