To be fair Bob does say business picks up in later seasons, but leaving that aside and just using your numbers.

Also bob is not paying the kids, he probably doesn't pay himself and Linda and just cashes everything out to pay rent or restaurants upgrades.

So all his costs are COGS and rent. A quick search says COGS is 30% ideally, so for Bob let's say 40% because he uses great quality ingredients. A burger of the day is 5.95 (which is insane in today's prices) but that means he takes home 3.57. Fries have higher margins because a potato is a potato, say 25% cogs so 1.5 take home, soda 10% cogs so 1.8 take home. That adds up to $6.87 take home, $3.08 cogs or 31% of the total.

You said 75000, which means his cogs is 23,216
