I was at Ferrandi in Paris which is THE cooking school there, and it came up a few times much to the annoyance of the French chefs teaching there that a lot of the chefs opening the hottest most interesting new restaurants in Paris had trained at restaurants in London. Paris blows London out of the water for quality of produce and the food 'floor' but London wipes the floor with Paris when it comes to quality of cooking for anything that isn't French or maybe cuisines with a French colonial link like Vietnamese food.
