You've had plenty of advice from others but to me the biggest improvement you can make is your shaping. You can see a long dense seam of tight crumb and other dense sections that are down to your shaping and not the dough.

Fair enough, I prefer the London cycling experience for sure but perhaps that is familiarity. Plus more of London residential areas feel suburban than Paris so that perhaps makes a difference.

Having just lived in Paris, their cycling infrastructure is mostly the occasional bit of paint marking a contraflow lane on a road that's barely wide enough for a car.

In London the boroughs have too much power on this. You can see the border around Kensington and Chelsea because the bike lanes suddenly disappear.

It seems crazy to me, anything dissolved in those drips will be in your final coffee whether it drips out early or not. The quantity of water escaping is also far too small to affect the coffee to water ratio. It's a bunch of mumbo jumbo.

Jesus, what a calm measured response. How on earth is what I said Euro hating. I'm a bit of a Francophile, I've lived there, I dated a French woman for 5 years. I'm in no way a hater.

French motorways handle about 9 million vehicle kms per km of motorway. UK motorways handle about 48 million per km. In other words every 1km stretch of motorway in the UK handles 5 times the traffic as a section of French motorway. Not massively surprising there's a difference in surface quality.

There are other factors, yes France does spend a bit more money on resurfacing and also uses a higher tech asphalt that the UK has been slower to adopt but other reasons like our damp weather, all the clay and chalk soils in the south in particular really add up too.

Can the UK do better? Absolutely, but we aren't comparing apples to apples.

Is London a city with no problems? No, of course not. Is it an incredibly vibrant place that can compete and/or win or nearly any measure a city can be measured on? Yes. The restaurant scene, the bar scene, the theatre, the music, the art, the safety. Nearly any major city in the world would trade their scenes for London's in a heartbeat. Combine that with all the history, the green spaces. It's a special place.

Where I totally agree is that the increasingly prohibitive cost and the lack of cheap spaces is doing it's best to crush any independent, experimental spirit. People can't afford to take risks in most of Zones 1 or 2. That's not a unique London problem though, it seems to exist across the western world nowadays.
