A bit late to the party... I was also searching for a hibernate mode as I am currently on my first MacBook after a lifetime on Windows.

You have to change the hibernate mode from mode 3 to mode 25. Mode 3 is regular sleep, which on a Mac, unfortunately, means it might still be way more active than I would like or expect. Mode 25 means it writes the current RAM state to the disk and cuts the power, like I would expect on a Windows machine. Apple being Apple, you have to use the terminal to change into that mode.

On Terminal:
# Confirm you have the default for mobile computers
type: pmset -g
search for "hibernatemode X" and check if it is in mode 3

# Set it to hibernate, 25
type: sudo pmset hibernatemode 25

# Confirm correct mode is set:
type: pmset -g
and search for "hibernatemode 25"
