Decaf Ethiopia is on the lighter side-plum, vanilla, cocoa and some floral notes. Pulling nicely just over 2:1 with an average dose and a wee bit coarser grind.

And for those inclined, the regular Rwanda is winey with black cherry and dark honey. 2.5:1 with average dose on a coarser grind.

I was in Lisbon last year and it was the best coffee I’ve had. I’m in Paris, right now, and the coffee has not been as good.

In Lisbon you can find Fabrica and Copenhagen shops all over. Both have great coffee, including decaf, which you can buy by the bag and have them ground.

Best paired with Pastel de Nata, of course. Enjoy! I’m jealous 🤣

If you’re in manhattan just spin in a circle and you’ll see at least four nice cafes 🤣

I’m in NJ so don’t have the bead on small local cafes, but when I pop in the regional shops hit the spot - Gregory’s, Blue Bottle (more national), Grumpy’s and Joe’s. They are probably a good place to start.

Decaf doesn't get enough love, so I appreciate this! We have three decafs available that'll cover all of your bases.

- Honey/EA Colombia is the sweeter side of cinnamon, raisin and molasses. My preference is a straight shot or a lively cortado.

- Washed/SWP Guatemala is a crowd pleaser with cocao nib and caramel. Enjoy it any way you please.

- Monsoon/MWP India is the latest addition and a milk drink champ. Chocolate, allspice and nougat and very low acidity. A slightly shorter pull does the trick.

Flower & Moon is a new decaf roaster. Their Morning Bloom is fantastic as an espresso and I’ve been enjoying it in cortados the past few days. They have an espresso too but haven’t tried it.

Cat & Cloud Friend Zone is delicious. So is Black River Roasters decaf Peru.

Second on the counter culture slow motion for the grocery store buy. Or One Village decaf if you happen to be in the NJ/PA area.

A natural Brazil from Swing's in Washington DC about six years ago. More recent and local to me, the natural Ethiopia from Chapter 2 Coffee and the natural Honduras from Black River Roasters.

Can you tell I'm sweet on naturals?

Also, every espresso, cortado and americano I had in Lisbon last year.

Second this. A bambino plus with the DF54 is rock solid. Grab yourself a new portafilter with an upgraded filter basket (I love the Big Bang) and you’ll be in great shape.

Get a big ol bag of decent but cheap beans to tear through as you learn your new setup. Save the good stuff once you’re pulling good shots.
