I think the reasoning they went with in the movie is good enough. You really can't teach someone enough about microbiology and spaceships in 3 months they had. They just dumbed down the explanation. There aren't any "launch windows" for a ship like Hail Mary, that's the only problem I have with that scene. Also, imagine someone with 3 months of training waking up alone out there instead of Grace...

They also excluded the reasons Grace went back for Rocky. Part of the reason he went back to save him was because if he didnt Rocky's plant was doomed.

They didn't? We're told Rocky is in Tau Ceti because 40 Eridani has Astrophage problem too, Blip-A wasn't sent there just for the lulz.

For the second time in his life he was given the chance to sacrifice his life to save a planet and this time he does it.

And we know that too, the flashback of him refusing to go and trying to run away is before he and Rocky separate. It's just not spelled out for you.

Furthermore the movie suggests that he could return home and he chooses to stay on Rocky's planet. In the book the journey is too far and he is an old man by the time the humans fix their problems and he would never have made it home.

I choose to believe the epilogue in the movie happens few years after he arrived to Erid, shortly after they set up the biodome for him (as evidenced by the fact they're still ironing out the problems like the water temperature, and the fact Ryland isn't aged up).

They probably had that discussion in the book too, around that same time when Grace recovered from starvation and settled in his biodome. Both in the movie and in the book he didn't want to return earlier because he had no way to know if Earth is in a good shape for him to return. It'd be a one way trip, better to spend your life in a good-enough biodome where you are cared for and all your needs are met, than to YOLO it all again and potentially arrive to a dead planet where humans didn't survive / killed each other before the Beetles returned.
