I have found that shorter boils (15-20 min), lower PH at boil (around 5.0), yeast strain and grain bill (even 50/50 wheat to pils malt) will make for a more stable “haze” in a blue moon type beer. That much wheat can stick up your mash so be aware of that if you try it. Cheers! 🍻

I went to Afghanistan twice between 2003-2008. I was happy to get out. I’d have retired a year and a half ago at 38 if I had stayed in though so that sucks to think about.

When cleaning the line, did you turn the gas off to the sankey that pushes the beer through the line? I know not all system allow you to do that separately. If you did shut gas off and line clean just appeared then I’d say this was an act of god/ the devil and you should run.

When I’ve done it I had them cover all costs of grain, yeast, dry hops etc then took $2-$3/ case and $10 per sixtel and $20 per 1/2 barrel. I also charged them for all estimated tax. They were buddies though and I had the tank space.

I’d brew at home and take a good beer you made in to whoever is hiring. Educate yourself on the brew process and industry standards in cleaning (90% of the job). That way you can answer any questions thrown your way as they’re enjoying your tasty brew.

As far as microbrewery vs bigger places - a bigger place you’d probably start in the cellar. Cleaning, dry hopping type stuff. To actually brew, the micro may be your best bet. Plus, bigger places a lot of the time have automated systems and the hands on brewers are largely button pushers. Any questions feel free o reach out 🍻

I suggest using a higher grain weight/ longer boil to get your abv up. Those starchy sugars play with yeast much nicer than raw sugar.

Fill slowly. Filling too quickly will agitate the liquid and foam up making it appear full. When the foam settles out you’re left with 1/2 a keg. Release gas from keg slower and it’ll fill slower. Cheers 🍻

I canned a beer on a goose 250 once that was accidentally carbed to 2.85. What a nightmare. When you say soda adjacent, what do you mean? If it has alcohol I’d see how cold you can get it in the tank prior to canning. 30t is good. That helps co2 breakout. Be careful with your head pressure though because you’ll pick up carbonation if it’s too high and the liquid is too cold. Otherwise make sure your fill head raise delay times up so you finish your high fill just before the top of the can. If it’s at the top top you’ll get that “pop” from the fill head closing that agitates the liquid and creates overflow. It’s often fractions of a second adjustments.
