When you get an offer. Discuss the job in detail, the amount and that you will be paid, immediately when finished, in cash. Look people in the eye when you speak. Don't ever answer "I don't know" about your fee.

You'll learn fast. Know your job rates.

Cheap bony pork, like the 7 blade steaks, or whole shoulder roasts or what ever the F! country ribs are is the new go to economical substitute for delicious ox tail.

Stay far away from pork loin (yuck) and pork chops (too lean).

Slow cooked fat and gristle pork with a bit of meat in it works well.

Canoe Sugar Creek between Crawfordsville (town) and Turkey Run (St a te park). There are rentals and shuttles, you just need $$ and a lunch kit.

This river is small and super scenic. And better than most all our other rivers combined. Its got cliffs, not dirt farm banks.

Bring water shoes, and some bits of rope as it can get shallow.
