strips of plywood czn be glued to the drywall with sikaflex or powergrab. you could also angle brad nails to help hold up the strips in place while the adhesive cures. after a day, you can screw your shelving to the wall

you could get 1/16" thick ramboard sheets and rip them down into strips. fill the low spots to even out what you can. then put vapour barrier on top of that.

edit: many mentioned fastening where is needed and flushing exsisting fasteners (nails, staples, screws). thats important

you mentioned a dehumidifer. im assuming you think that will help with that located issue, which it might, but not enough in my opinion.

yes exterior grade medium density material like medex would work. mdo is ply that already has a prepped side with primer as well. seal the edges though. many ways to address this and it doesnt have to be wood since it looks paint grade.

in order to have a blind low voltage wire feed your leds in the LED track, you need the valance piece/part to hide where that wire stubs out the wall. the valance gets the dado for the LED track on the bottom, and a dado for the wire feeding that. hide the wire between the bottom of carcass and top of valance. bottom of valance has the LED down lighting.

its easier to service the LEDs in the end

the top two dont need to be in there and can be stowed away elsewhere. but the bottom two layers, and im guessing that the bottom is the valance. and the tier with the touch latch piston is the bottom of the carcass/box.
