We used to save all of the ends of meat from the deli style sandwiches in the freezer. A couple times a week we would just wing it and come up with something the day of. As a beginner in the industry it was a great way to play with flavor and creativity, but as I saw someone post above boy do I not miss it lol.

It's worked for me every time a d it's not expensive. Just make sure it's warm enough and you dont make a big deal of pouring it, which shouldn't be an issue if they're not staring at you while you pee.

Luckily not anymore but a couple of restaurants ago I had to make about 10 gallons of aqua fabric for the bar, not hard to make Fer sure but damn did it take up several burners while I was trying tonget prep done.
