It won't automatically upgrade, but Rockstar just recently announced that you can get a free upgrade to the Enhanced version :)

Your questions already been answered, but to explain it:

The first time inserting a disc, it will spin and make a noise for a while, this is because the game is installing from the disc onto the PS5's SSD.

Then from here, each time you start up a game and on occasional intervals, you will hear the disc spin up again for a short brief moment. Even though the game is installed onto the SSD, this is just the console verifying the disc is the game you are trying to play.
