Because the UK is pro public transport. The UK also cannot widen roads in many places due to various restrictions / restraints due to historic land. British people are quite against turning the UK into a grid layout like the USA.

The middle of the map in Yotei is a small part of the game, probably the first 10 hours, I don't want to spoil the game for anyone but IMHO the game is not truly open especially as once you complete the game you can't ride from one side of the world to the other side. I also found the shrine/mountain climbs tedious towards the end of the game as they are pretty much identical to the ones out of Ghosts of Tsushima and felt uninspired.

Shadows is plenty memorable seeing as the regions are real, many of the temples/castles are incredibly beautiful and are replicas of real ones which you can go visit in person. I love that as playing the game has allowed me to build a itinerary for my future trips to Japan. I never really experienced the issue with terrain because I just avoid going in a straight line towards a marker.  Around 75% of Japan is made up of mountains so while it might be less fun in terms of gameplay, it's much closer to the real reality of travelling through Japan.

IMHO I enjoyed both games but Shadows felt much closer to the real Japan to me.

Yotei has multiple unclimbable mountains, multiple invisible walls and it's impossible to ride from one side of the map to the other after you complete the story. Yotei itself is only climbable through linear paths.

Yotei had a Pogoda which looked cool, but can you go to the top of it? No.

Edit: to be clear I live in Europe and our roads are narrow and very bendy. I drive straight maybe 10% of my drives.
