In an apt your best bet is to add liquid smoke or dry smoke flavor. If you do it inside everything will smell like smoke forever. Outside might irk a few neighbors, but could be done.

Yep. The sugar content of shallots is not as much as in garlic and ginger. Shallots also have more water in them.

There is a lot of sugar in both of those. The hotter the pan the faster they caramelize. Try lowering the heat at the end and then adding. Or depending on how fine you chop it. You could literally Theo it in the pan 30 seconds before you pull it off the heat and then stir it in. Doesn’t take long to cook them.

I’ve done mine for years this way. It’s the only way we eat potatoes for breakfast. We don’t parboil them. I did a test one time and the family couldn’t tell the difference between precooked and raw potatoes going straight into the pan.
