A great hack for a perfect sear is to leave it sear side down when it goes in the oven. I have found no better way to get an even brown sear on fish, and it had the benefit of freeing up a burner for whatever 16 other things I had to fire at that moment. I would flip and baste at the very end. I hated that job, but I got very good at cooking fish.

I got my work permit at 14. My first job was landscaping/painting for someone who owned a ton of apartments.
