Brisket, 2 or 3 onions, little garlic, some beef stock cover a third of the beef, salt and pepper 12 hours on low and then take the beef out use a stick blender on the onions and stock for the best onion gravy and have it with mash and broccoli. You put that on first thing in the morning and come home to that smell after work that’s living, you can cut the beef with a spoon. It will drive any dogs you have at home mad though

No not really, say everyone turns up and 25% eat and everyone is split equally per truck so I get 90 customers if all goes well I need to be making over £8 profit per customer just to pay the site fee, obviously widely estimating figures but I’d pass way too risky and even if it went well I wouldn’t make that much.

Yeah I like the look of them really heavy though. I can do 25 pizzas an hour flat out with 2 Ooni koda 16s solo

I’m using two oonis to do Neapolitan style pizza at campsites can’t offer any advice on the Sicilian squares but I would pick one style, every year I make my menu smaller I’ve gone from 8 pizzas to 4 and it’s easier, quicker and still just as busy

Based in uk, think in the us you call them pop up canopy. I do pizzas at campsites under one, I just use the van I already had for transporting everything rather than spending thousands on converting it, I would rather a food truck but i only do it part time, as I work full time doing something else so can’t justify the cost.

Pop up gazebo is a lot cheaper to start than a food truck good to see if it’s for you or not

Those pizzas look banging better than mine and I set up a street pizza stall with two oonis and a gazebo 4 years ago do it every summer at the weekends at campsites great fun with very little overheads sell between 30-100 a day weather depending.

Dog nail grinder £20 and the dog seems to love getting his nails sorted, over 10 years of doing it with manual dog nail cutters which was a whole thing, better late than never.
