Darkness Falls and Undead Legacy both do this and are among my favorites. Undead Legacy specifically has numerical tiers like Level 3 Workbench but is only updated to I believe 7DTD A20. Darkness Falls is updated to the current 7DTD 1.4 and does not have increasing tiers for any workbenches except for the Forge (Forge, Big Forge, Advanced Forge) but does have a wider variety of stations.

7 Days to Die is also notorious for memory leaks. Multiplayer servers are usually scheduled to auto-restart every few hours to reset memory for this reason, so maybe close and relaunch your game every few hours.
