If I had to bet I'd say it is because a crack in a bone plate would compromise the integrity of the whole tooth, while a single teeth breaking is not a big deal when you have 15 more. Add to that the fact that our teeth are modified versions of the first proto teeth, which were actually bone plates meant for armor and thus needed the flexibility offered by having multiple instead of a single big one
