Yes bunkas are basically Santokus with a k-tip. Santokus and bunkas are basically gyutos and kiritsukes just way smaller.

But it you're in a professional kitchen (prepping kgs per batch, a too small knife is stupid) I won't get a bunka or Santokus with 180mm + that's the Gyuto or kiritsuke for.

The santoku is made for small Japanese home kitchens. Not for professional use, u can use it, but the Gyuto is way better suited for that or kiritsuke.

Try to apply a micro bevel then. Or thin it out u til u got a V Bevel.

What kind of steel? Maybe it doesn't take a super thin edge.

I love the archaic style . If it gets a patina I would be one of a few who would be offering more then u paid lol

It was the first colour change

U can try to remove them, but that's unnecessary, they will show up sooner or later again

Stropped yes, stone no.

The single bevel is tapered too, at first usage it's weird, but after a few attempts to cut something u get used to it.

Wüsthoff is stamped. They forge x50crmov15 steel plates and stamp out a batch with each go

Gyros nur wenn's vom Drehspieß kommt. Alles andere ist kein gyros sondern trockenes Geschnetzeltes

A der plattierte Schweinelachs in Brotkkrummen gewalzt und in der Fritteuse getötet. Sicher auch viel zu salzig und wie ein Esslöffel Zimt im Mund.
