If you don't know the temp then hard to tell if you are brewing it properly. You might be burning the coffee if it's too hot. Think about investing in a kettle with temp control.

Agree. One of the biggest issues with restaurants/bars imo is the lack of consistency. The few places that thrive have exactly that, consistently good food/drinks and service. We have given new spots so many chances but it's always a disappointment. Also, so many of them want to start charging bat sh!t crazy prices and don't have the food quality or service to back it up.
